Neck Roast

A beef neck roast is a budget-friendly, incredibly flavorful cut of meat. This cut contains very little fat but features a heavy amount of connective tissue and collagen. When cooked slowly with moisture, that collagen melts down completely, yielding a rich texture and deeply intense beef flavor very similar to oxtail, short ribs, or beef shank.
